Shrimp Fettuccine Alfredo Recipe
Ingredients:
- 12 oz fettuccine pasta
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup grated Romano cheese (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (optional)
Instructions:
- Cook the fettuccine:
- Boil a large pot of salted water and cook the fettuccine according to package instructions. Drain and set aside.
- Cook the shrimp:
- In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
- Prepare the Alfredo sauce:
- In the same skillet, add butter and garlic. Sauté for about 1-2 minutes until fragrant.
- Lower the heat and stir in the heavy cream, cooking for 2-3 minutes until slightly thickened.
- Gradually add Parmesan cheese (and Romano if using), stirring continuously until melted and smooth. Season with salt and pepper to taste.
- Combine everything:
- Add the cooked fettuccine to the Alfredo sauce, tossing to coat the pasta evenly.
- Add the shrimp back to the skillet and toss gently to combine.
- Serve:
- Garnish with fresh parsley and serve with lemon wedges on the side if desired.
