Here’s a flavorful and fast Savory Garlic-Ginger Beef with Tender Bok Choy Stir-Fry recipe — a perfect balance of umami, heat, and greens. It’s quick enough for a weeknight dinner but tasty enough to serve to guests!


🥢 Savory Garlic-Ginger Beef with Bok Choy Stir-Fry

📋 Ingredients:

For the Beef Marinade:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon cornstarch

  • ½ teaspoon sugar

For the Sauce:

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon hoisin sauce (optional for a touch of sweetness)

  • 1 tablespoon rice vinegar

  • ½ teaspoon cornstarch

  • ¼ cup water

Stir-Fry:

  • 1 tablespoon vegetable oil

  • 4 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced or grated

  • 4–5 baby bok choy, halved or quartered (or use 2 large bok choy, chopped)

  • 2 green onions, chopped (optional)

  • Cooked rice or noodles, for serving

  • Sesame seeds & chili flakes (optional garnish)


🔪 Instructions:

1. Marinate the Beef:

  • In a bowl, combine sliced beef with marinade ingredients.

  • Mix well and let sit for at least 15 minutes (up to 1 hour for deeper flavor).

2. Mix the Sauce:

  • In a small bowl, whisk together all sauce ingredients. Set aside.

3. Sear the Beef:

  • Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.

  • Add marinated beef in a single layer (do it in batches if needed).

  • Sear 1–2 minutes per side until just browned. Remove from pan and set aside.

4. Sauté Garlic & Ginger:

  • In the same pan, add a touch more oil if needed.

  • Sauté garlic and ginger for about 30 seconds, until fragrant.

5. Cook Bok Choy:

  • Add bok choy to the pan. Stir-fry for 2–3 minutes until tender but still crisp.

  • If using large bok choy, sauté stalks first, then add leafy tops last.

6. Add Sauce & Beef:

  • Return beef to the pan.

  • Pour in the sauce and toss everything to coat.

  • Stir-fry another 1–2 minutes, until the sauce thickens and glazes the beef and bok choy.


🍽️ Serve Hot:

  • Spoon over steamed jasmine rice, brown rice, or noodles.

  • Garnish with sesame seeds, green onions, or chili flakes for extra flair.


🧊 Leftovers:

  • Store in an airtight container for up to 3 days in the fridge.

  • Reheat gently on the stovetop or microwave.
