Ingredients
- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 1/2 tsp paprika (optional)
- 1 cup (250ml) milk
- 1/2 cup (125ml) sour cream or plain yogurt
- 2 large eggs
- 1/4 cup (60ml) unsalted butter, melted
- 1 1/2 cups (200g) cooked and grated potato (peeled or unpeeled)
- 1 cup (100g) shredded cheese (cheddar, mozzarella, or a mix)
- 6 slices cooked bacon, crumbled
- 2 tbsp chopped chives or green onions (optional)
Instructions
- Prepare the Oven and Muffin Tin
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly. - Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, garlic powder, and paprika. - Combine the Wet Ingredients
In another bowl, whisk together the milk, sour cream, eggs, and melted butter until smooth. - Combine the Batter
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix. - Fold in the Mix-Ins
Gently fold in the grated potato, shredded cheese, crumbled bacon, and chives/green onions. - Fill the Muffin Tin
Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full. - Bake
Bake for 20-25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean. - Cool and Serve
