Pork Humba Recipe
Humba is a sweet-savory Filipino dish similar to adobo but with a unique twist, featuring fermented black beans, pineapple juice, and a touch of sugar.
Ingredients
- 2 lbs pork belly (or pork shoulder), cut into chunks
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
- 1/4 cup salted black beans (tausi), rinsed
- 1 small onion, chopped
- 4 cloves garlic, minced
- 1-2 bay leaves
- 1/2 tsp black peppercorns
- 1 cup water
- 1/2 cup banana blossoms (optional, rehydrated if dried)
- 1/2 cup hard-boiled eggs (optional, peeled)
- Cooking oil
Instructions
- Marinate the Pork:
- In a bowl, mix pork chunks with soy sauce and vinegar.
- Let it marinate for 30 minutes.
- Sauté the Aromatics:
- Heat a large pot or deep skillet over medium heat. Add a little oil.
- Sauté onion and garlic until fragrant.
- Cook the Pork:
- Add the marinated pork (reserve the marinade) and cook until browned on all sides.
- Simmer with the Marinade:
- Pour in the reserved marinade, pineapple juice, water, and brown sugar. Stir to combine.
- Add Seasonings:
- Add black beans, bay leaves, and peppercorns.
- Simmer Until Tender:
- Cover and let it simmer on low heat for 45 minutes to 1 hour, stirring occasionally. Add water if the sauce reduces too much.
- Finish with Additions:
- Add banana blossoms and hard-boiled eggs if using. Simmer for an additional 10-15 minutes.
- Adjust the Taste:
- Taste the sauce and adjust seasoning with salt, sugar, or more soy sauce if needed.
- Serve:
- Serve warm over steamed rice.
