Ooey-Gooey Cinnamon Roll Cheesecake Bars
Ingredients:
For the crust and swirl:
-
1 can (8 oz) refrigerated cinnamon roll dough (with icing)
For the cheesecake filling:
-
16 oz (450g) cream cheese, softened
-
1/2 cup granulated sugar
-
1 large egg
-
1 tsp vanilla extract
Instructions:
-
Preheat oven to 350°F (175°C). Line a 9×9 inch square baking pan with parchment paper or grease it.
-
Open the can of cinnamon roll dough. Separate the rolls and cut each roll into quarters.
-
Press half the dough pieces evenly into the bottom of the pan to form the crust.
-
Make the cheesecake filling: In a medium bowl, beat cream cheese until smooth. Add sugar, egg, and vanilla and mix until creamy and combined.
-
Pour the cheesecake filling over the pressed dough in the pan and spread evenly.
-
Scatter the remaining cinnamon roll dough pieces on top of the cheesecake layer.
-
Bake for 30-35 minutes, until the cheesecake layer is mostly set and the dough pieces on top are cooked through.
-
Remove from oven and drizzle with the icing from the cinnamon roll can while still warm.
-
Let cool completely before slicing into bars for best texture.
