🍽️ One-Pan Chicken with Buttered Noodles
🛒 Ingredients (Serves 4):
-
4 boneless, skinless chicken thighs or breasts
-
Salt and black pepper, to taste
-
1 tsp garlic powder
-
1 tsp paprika (optional)
-
2 tbsp olive oil or butter
-
3–4 cups chicken broth (low-sodium preferred)
-
8 oz egg noodles (or any small pasta)
-
2–4 tbsp butter (to taste)
-
2 cloves garlic, minced
-
2 tbsp fresh parsley, chopped (optional)
-
Grated Parmesan for serving (optional but amazing)
🔪 Instructions:
1. Season the Chicken:
-
Pat chicken dry and season both sides with salt, pepper, garlic powder, and paprika.
2. Sear the Chicken:
-
Heat olive oil or butter in a large deep skillet or sauté pan over medium heat.
-
Add chicken and sear for 4–5 minutes per side, until golden brown and cooked through.
-
Remove and set aside (cover to keep warm).
3. Cook the Noodles:
-
In the same pan (don’t wipe it!), add minced garlic and sauté for 30 seconds.
-
Pour in chicken broth and bring to a simmer.
-
Add the egg noodles, stir, and simmer uncovered for 7–9 minutes, stirring occasionally, until noodles are tender and most of the broth is absorbed.
4. Butter It Up:
-
Turn off the heat, stir in butter and season to taste.
-
Add a splash more broth or water if it looks dry.
5. Finish:
-
Nestle the chicken back on top of the noodles.
-
Sprinkle with chopped parsley and grated Parmesan (if using).
-
Serve hot and enjoy the buttery, garlicky goodness!
📝 Variations:
-
Add peas, spinach, or mushrooms for a veggie boost.
-
Use rotisserie chicken for an even faster version.
-
Sub gluten-free pasta if needed — just monitor liquid levels.
Let me know if you’d like a creamy version or want to toss in some lemon or chili flakes for extra zing!
