Garlic Butter Lobster and Scallops Recipe
Ingredients:
- Lobster tails: 2 large, split in half lengthwise
- Sea scallops: 8 large, patted dry
- Butter: 6 tablespoons, unsalted
- Garlic: 4 cloves, minced
- Lemon juice: 2 tablespoons, freshly squeezed
- Olive oil: 2 tablespoons
- Paprika: 1 teaspoon
- Fresh parsley: 2 tablespoons, chopped
- Salt and pepper: To taste
- Red pepper flakes: 1/4 teaspoon (optional, for a bit of heat)
Instructions:
- Prepare the seafood:
- Rinse lobster tails and scallops under cold water; pat dry.
- Sprinkle the lobster and scallops lightly with salt, pepper, and paprika.
- Make the garlic butter:
- In a small saucepan, melt 4 tablespoons of butter over medium heat.
- Add the minced garlic and cook for about 1 minute until fragrant.
- Stir in the lemon juice and red pepper flakes (if using). Set aside.
- Sear the scallops:
- Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil and 1 tablespoon of butter.
- Once hot, place the scallops in the pan, ensuring they’re not crowded. Sear for 2 minutes per side until golden brown. Remove from the pan and set aside.
- Cook the lobster:
- In the same skillet, add the remaining olive oil and place the lobster tails flesh-side down. Cook for 3–4 minutes, then flip and baste with the garlic butter. Continue cooking until the shells turn bright red and the meat is opaque (about 5–6 minutes).
- Combine and garnish:
- Return the scallops to the skillet, spoon garlic butter over the lobster and scallops, and let everything warm for about 2 minutes.
- Sprinkle with fresh parsley before serving.
