Fantastic Fried Rice
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 2 tbsp vegetable oil or sesame oil
- 2 large eggs, beaten
- 1/2 cup diced onion
- 1/2 cup mixed veggies (peas, carrots, corn, or bell peppers work great)
- 3 green onions, chopped (for garnish)
- 1-2 garlic cloves, minced
- 1/2 cup cooked protein (shrimp, chicken, pork, or tofu) – optional
- 3 tbsp soy sauce (adjust to taste)
- 1 tsp oyster sauce (optional for depth of flavor)
- 1 tsp sesame oil (for finishing)
- Salt and pepper to taste
Instructions:
- Prep the Rice: Make sure the rice is cold and slightly dry, which helps it fry up without clumping.
- Scramble the Eggs: Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the beaten eggs and cook until scrambled. Set aside.
- Sauté Vegetables and Garlic: In the same skillet, add remaining oil. Add diced onion, cook until translucent (2-3 mins). Add minced garlic and mixed veggies, stir-frying for another 2-3 mins until fragrant.
- Add Rice and Protein: Add the rice to the skillet, breaking it up with a spatula. Toss in any cooked protein and stir-fry everything for 3-5 mins, until rice is evenly heated and mixed.
- Season and Mix: Drizzle soy sauce and oyster sauce (if using) over the rice. Stir until the rice is coated. Return scrambled eggs to the pan, breaking them up and mixing in.
- Finish and Serve: Turn off the heat, add sesame oil, and stir well. Taste, and add salt or pepper as needed. Garnish with green onions.
Tips:
- For extra flavor, add a splash of rice vinegar or a pinch of sugar to balance the soy sauce.
