Here’s an easy French Onion Soup recipe for you!
Ingredients:
- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar (to help caramelize the onions)
- 4 cups beef broth (or vegetable broth for a lighter version)
- 1/2 cup dry white wine (optional)
- 2 teaspoons fresh thyme or 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 4 slices of French baguette
- 1 1/2 cups shredded Gruyère cheese (or a mix of Gruyère and Swiss)
Instructions:
-
Caramelize the onions: In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and sugar. Stir occasionally to ensure they cook evenly. After about 20 minutes, the onions should begin to soften and turn golden brown. Keep cooking for another 15-20 minutes until they are deeply caramelized, stirring occasionally.
-
Deglaze the pot: Once the onions are caramelized, add the white wine (if using) to the pot and cook for about 2 minutes, scraping up any bits stuck to the bottom of the pot.
-
Add the broth and seasonings: Add the beef broth, thyme, and bay leaf to the pot. Stir, bring to a simmer, and cook for 15-20 minutes. Season with salt and pepper to taste. Remove the bay leaf before serving.
-
Prepare the baguette slices: While the soup simmers, toast the baguette slices under the broiler until golden brown on both sides. Alternatively, you can toast them in a skillet.
-
Assemble the soup: Ladle the soup into oven-safe bowls. Place a slice of toasted baguette on top of each bowl, and sprinkle with the shredded cheese.
-
Broil the soup: Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown.
-
Serve: Let the soup cool slightly, then serve warm!
