Here is an easy recipe for making Divinity Candy, a sweet and fluffy treat that’s perfect for the holidays or any special occasion:
Ingredients:
- 2 1/4 cups of granulated sugar
- 1/2 cup of light corn syrup
- 1/4 cup of water
- 1/8 tsp of salt
- 2 large egg whites
- 1 tsp of vanilla extract (or your preferred flavoring)
- 1 cup of chopped pecans or walnuts (optional)
Instructions:
- Prepare the Pan: Line a baking sheet with wax paper or parchment paper and set it aside.
- Cook the Sugar Syrup:
- In a medium saucepan, combine the sugar, corn syrup, water, and salt.
- Cook over medium heat, stirring occasionally, until the mixture reaches the soft-ball stage (238°F or 114°C) on a candy thermometer. This will take about 8–10 minutes.
- Whip the Egg Whites:
- While the syrup is cooking, place the egg whites in a large mixing bowl.
- Beat the egg whites with an electric mixer on medium speed until they form stiff peaks. This may take around 5 minutes.
- Add the Syrup:
- Once the sugar syrup has reached the right temperature, carefully pour it in a thin stream into the egg whites while continuing to beat on medium speed. Be careful not to splash the hot syrup.
- Continue beating until the mixture is thick and glossy (about 5–10 minutes).
- Flavor and Nuts (Optional):
- Add the vanilla extract and, if desired, fold in the chopped nuts.
- Form the Candy:
- Drop spoonfuls of the divinity mixture onto the prepared baking sheet.
- Let the candies cool and harden at room temperature for about 2-3 hours.
- Enjoy: Once cooled and set, your divinity candy is ready to enjoy!
Tips:
- Make sure to watch the syrup closely as it can easily overcook and harden too much.
- If you’re adding nuts, ensure they’re evenly mixed in so each candy piece has a nice balance.
