-
1 tbsp butter
-
1 tbsp all-purpose flour
-
1/2 cup milk (whole milk preferred)
-
Pinch of salt and black pepper
-
Pinch of nutmeg (optional, but French-style)
👨🍳 Instructions:
1. Make the béchamel:

Slowly whisk in the milk and stir constantly until thickened (2–3 minutes).
-
Season with a pinch of salt, pepper, and nutmeg. Set aside.
2. Assemble the sandwiches:
-
Lightly butter one side of each bread slice.
-
On the unbuttered side of two slices, spread Dijon mustard (if using).
-
Layer each with 2 slices of ham and a generous handful of grated cheese.
-
Top with the other slices of bread, buttered side facing out.
3. Toast the sandwiches:
-
Heat a skillet over medium heat.
-
Grill each sandwich until golden and crisp on both sides and the cheese is melty inside (about 3–4 minutes per side).
4. Top and broil:
-
Preheat the broiler.
-
Place toasted sandwiches on a baking sheet.
-
Spoon béchamel over the top and sprinkle with extra grated cheese.
