Crème Brûlée Cheesecake Recipe

Ingredients
Crust:
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 tablespoon vanilla extract
- 3 large eggs
Crème Brûlée Topping:
- 1/4 cup granulated sugar (for caramelizing)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then let cool.
2. Make the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy (about 2-3 minutes).
- Add sour cream, heavy cream, and vanilla extract; mix until fully incorporated.
- Beat in the eggs one at a time, mixing just until combined (do not overmix).
- Pour the cheesecake batter over the crust.
3. Bake the Cheesecake:
- Wrap the bottom of the springform pan in aluminum foil to prevent water from seeping in.
- Place the pan in a larger baking dish and pour hot water into the dish to create a water bath (about halfway up the sides of the pan).
- Bake for 1 hour to 1 hour 15 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and chill in the refrigerator for 4-6 hours or overnight.
4. Add the Crème Brûlée Topping:
- Sprinkle the 1/4 cup sugar evenly over the top of the chilled cheesecake.
- Using a kitchen torch, carefully melt the sugar until it forms a golden, glassy crust. (If you don’t have a torch, place the cheesecake under the broiler for 1-2 minutes, watching closely.)
- Let the caramelized sugar cool and harden before serving.
