Turkish bread, or “Pide,” is a soft, airy flatbread with a slightly chewy texture, often topped with sesame or nigella seeds. It’s versatile, delicious on its own, or great as a side for dipping in soups, curries, or hummus. Here’s a simple recipe to make it at home!
Turkish Pide Bread Recipe
Ingredients
- 2 ½ cups all-purpose flour (plus extra for dusting)
- 1 cup warm water
- 1 packet (2 ¼ tsp) active dry yeast
- 1 tsp sugar
- 1 tsp salt
- 3 tbsp olive oil
- 1 tbsp plain yogurt (optional for extra softness)
- 1 egg yolk (for glaze)
- Sesame seeds or nigella seeds for topping
Instructions
- Activate the Yeast: In a small bowl, mix the warm water and sugar, then add the yeast. Stir and let it sit for 5–10 minutes until it becomes foamy.
- Make the Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center, add the yeast mixture, olive oil, and yogurt if using. Mix until a dough forms, then knead for about 8–10 minutes until it’s smooth and elastic.
- First Rise: Shape the dough into a ball and place it in an oiled bowl. Cover with a damp cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Shape the Bread: Preheat the oven to 425°F (220°C) and place a baking sheet inside to heat up. Punch down the dough and transfer it to a lightly floured surface. Roll it into an oval shape, about 1 inch thick. Transfer it to a sheet of parchment paper for easy handling.
- Add Glaze and Seeds: Beat the egg yolk with a bit of water and brush it over the dough’s surface. Sprinkle sesame or nigella seeds on top.
- Bake: Carefully transfer the parchment paper with the dough onto the preheated baking sheet. Bake for 10–15 minutes, or until the bread is golden and puffed.
- Serve: Let it cool slightly before slicing. Turkish pide is best served warm!
